Recipes and Reference Information for Preserving the Harvest

You might notice in a lot of older cookbooks, especially community cookbooks, recipes for canning foods.  You'll even find recipes online or given to you by friends and neighbors.  As fun as it might be to use these types of recipes, or even use old family recipes passed down among generations, it is very important to consult current sources of information for tested food preservation recipes.  You can check with your State Extension, or I've included some of my favorite resources here.  Be sure to only use recipes that have been published after 1988 (1989 to present) in order to ensure safety in processing techniques, time, temperature, and acidity.
